Two very different lands. Trigny in the Massif de Saint-Thierry for roundness, Ville-Dommange for freshness and length. Low-intervention winemaking throughout: pressed by gravity, settled by natural decantation, fermented on natural yeast.

Fabien works four hectares split between two massifs: one third at Ville-Dommange in the Montagne de Reims, two thirds at Trigny in the Massif de Saint-Thierry. Ville-Dommange brings the limestone matrix that gives the wine its ageing potential; Trigny brings the clay-sand matrix, and with it volume and texture.
“But these are broad lines, because on each terroir you have to count between five and six different types of soil.”
He came to see the two as complementary: Ville-Dommange for the tension of the limestone, Trigny for the texture of the clay-sand.

Most plots ferment in second-hand barrels. The micro-oxygenation is deliberately sought.
Stainless steel for Trigny Meunier
“The presence of iron oxide in the soil at Trigny tells me there is a greater sensitivity to oxidation, which is why a stainless steel vinification is more judicious in this case.”

This Champagne rosé reminds those moments of carefree during childhood, when we were enjoying raspberry and wild strawberry « behind the garden ».

Pale yellow; rapid, fine and abundant effervescence. Great freshness with citrus aromas — lemon, grapefruit — opening on iodized notes. The attack is fresh and tight; the finish tangy and very long, closing on slightly saline notes.
